The heirloom cane is hand-cut and taken to the estate's trapiche, where skilled artisans press the cane into juice and cook it into sugar. The juice is boiled in a series of pots heated by burning the leftover cane fiber, requiring constant attention throughout the process. The reduced sugar syrup is tossed through a window, one bowl at a time, and whipped with a long-handled paddle to achieve a light, fluffy, granulated sugar texture.
